Originally, I am from a beautiful capital of Azerbaijan, Baku. Our cuisine is delicious, however, many of our traditional dishes include meat.
My idea is to veganise some of Azerbaijani dishes and share those recipes with you guys, so you can get the feeling of how a plant-based Caucasian food tastes.
Servings: 3-4 People I Prep Time: 30 Min I Cook time: 20-25 Min
Ingredients
vegan Bolognese sauce
1 onion
2 eggplants
3 tomatoes
2 bell peppers
1 tbsp of tomato paste
coconut oil
2 cloves of garlic
a pack of vegan minced meat
vegan cheese
herbs of your choice
salt, pepper, spice mix of your choice
Directions
Preheat your oven to 200°C. To a large pan on a medium-high heat add a coconut oil, garlic, onion, spices & cook for about 3 minutes.
Add the vegan minced meat & cook for ca. 5 minutes. Then add the vegan bolognese sauce & cook for another 5 minutes.
Cut off the top of eggplants, bell peppers & tomatoes; pull out the core & the seeds. Put aside. Cut the core in small pieces, mix together & cook for 10 minutes. Stir in the tomato paste.
Add the cooked minced meat sauce to the cooked vegetables, stir & fill the mixture into each pepper, tomato & eggplant. Top with vegan cheese & bake in the oven at 170°C for ca. 25 minutes.
Garnish with herbs of your choice. And Voila! Your dinner is ready.
