Shirin Plov is among the most traditional dishes of Azerbaijan, that originates from the capital of Baku. It contains a sweet flavor and is cooked only with Basmati rice that offers a unique taste.

200 g basmati rice
330 ml plant-based milk
80 g unsalted vegan butter
5 strands saffron
50 g soft pitted dates
50 g sultanas
50 g dried apricots

Pour 50 ml of boiling water into a cup & add the saffron. Leave to infuse for 15 minutes.
Wash the rice. Put the milk, butter & saffron into a pan, then add the rice. Bring to the boil and then leave to simmer until 2/3 of the milk has been absorbed.
Add the fruits and spices to the pan, stir in, and leave over a low heat until the rice has cooked through. Nüs olsun! :-)
