black beans (canned)
herbs of your choice (here I used cilantro)

Preheat oven to 200ºC. Using a fork, poke small holes in the sweet potato, going all the way round and cut in half. Line baking tray with parchment paper and put potatoes on it.
In a pan, add a bit of olive oil and fry onion and garlic. Add tomatoes and spices, salt and pepper. Add pak choi and cook everything together for 3-5 minutes.
When pak choi is cooked, add it on top of potatoes. Add the canned black beans.
Bake for 40 minutes or until the fork is tender.
Drizzle with the lime juice, add cilantro on top and two spoons of coconut yoghurt.
