Vegan Banana Muffins

These delicious banana muffins could be served for breakfast, as a snack between meals or as delicious dessert. This recipe goes over so well also with kids.


  • 3 ripe bananas

  • 3/4 cup (180 ml) plant-based milk

  • 1 tbsp (14 g) coconut oil

  • 1 1/2 cups (156 g) oat flour

  • 1 cup (116 g) chickpea flour

  • 1/2 cup (112 g) coconut sugar

  • 1 tbsp (3 g) instant coffee granules

  • 2 tsp (7 g) baking powder

  • 1/4 tsp salt

  • and kind of nuts for topping


  1. Preheat the oven to 200°C and grease the muffin tin.

  2. To a bowl, add the bananas and mash until pureed. Then add the milk and oil, mix well.

  3. Add the remaining ingredients, mix everything together and fill the wells of the muffin tin.

  4. Add the nuts to the top of each muffin.

  5. Bake for 15-20 minutes, or until ready. Cool for 5 minutes before removing from the muffin tins.
